Cheese Stuffed Zucchini - cooking recipe

Ingredients
    2 medium zucchini
    1/4 c. finely chopped onion
    1 Tbsp. margarine
    3/4 c. small curd cottage cheese
    2/3 c. cooked rice
    2 tsp. dried parsley
    1/4 tsp. salt
    1/8 tsp. dried basil
    4 strips Cheddar cheese
Preparation
    Trim ends of zucchini.
    Cook in small amount of boiling salted water for 8 minutes or until just tender. Halve lengthwise. Scoop out centers and dice. Cook onion in margarine until tender. Stir in diced zucchini, cottage cheese, rice, parsley, salt and basil.
