Saucy Potatoes - cooking recipe

Ingredients
    3 large potatoes, peeled and cubed
    1 medium onion, chopped
    3 Tbsp. green pepper, chopped
    1/4 c. butter, melted
    1/2 Tbsp. flour
    2 c. milk
    1/3 c. Cheddar cheese, shredded
    3 Tbsp. pimento, chopped
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Cook potatoes in boiling water for 15 to 20 minutes, until tender.
    Drain and set aside.
    Saute onion and green pepper in butter until tender; add flour, stirring constantly.
    Add milk; stir until thick.
    Add cheese, salt and pepper.
    Stir until cheese melts.
    Stir in potatoes and pimento.
    Spoon mixture into greased 1 1/2-quart casserole dish.
    Bake, uncovered, at 350\u00b0 for 30 minutes or until bubbly.
    Yield: 6 servings.
