Columbia River Eel(Modern) - cooking recipe
Ingredients

2 lb. eels, sliced
1 lb. tomatoes
1 bunch green onions
1 lb. mushrooms
salt
pepper
lard
Preparation

Slice tomatoes into thick portions; chop mushrooms and onion. Cover bottom of baking pan or dish with half the mixture of tomatoes, onions and mushrooms.
Put eel over this bed of vegetables and cover with remaining mixture.
Add a few tablespoons of lard and bake at 350\u00b0 for 35 to 40 minutes.
Salt and pepper to taste.
