Sauted Zucchini - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    2 lb. zucchini, sliced into 1/2-inch thick rounds
    1/2 c. whole wheat bread crumbs, toasted
    2 Tbsp. minced almonds
    1 Tbsp. grated Parmesan cheese
    1/4 c. fresh parsley, finely chopped
    3/4 tsp. dried oregano
    1 clove garlic (optional)
    dash of salt and black pepper to taste
Preparation
    In a
    nonstick skillet, heat oil over medium-high heat. Add zucchini and saut until just tender and lightly browned, 5 to 8 minutes. Combine remaining ingredients and add to zucchini. Remove from heat. Toss gently and serve immediately.
