Zucchini Relish - cooking recipe
Ingredients

12 c. zucchini
4 c. onions
5 Tbsp. salt
6 c. sugar
2 1/4 c. vinegar
1 Tbsp. dry mustard
1 Tbsp. turmeric
1 Tbsp. cornstarch
1 Tbsp. nutmeg
2 tsp. celery seed
Preparation

Blend zucchini and onions together.
Sprinkle salt over mixture and let set overnight.
Drain and rinse twice.
Stir together the sugar, vinegar, mustard, turmeric, cornstarch, nutmeg and celery seed.
Heat until it boils.
Add zucchini and onions. Heat again until it boils about 30 minutes.
Makes 6 pints.
