Collard Greens A La Hurt - cooking recipe

Ingredients
    2 pkg. collard greens (fresh)
    salt
    1 large onion
    3 slices bacon
    Tabasco sauce
    salt and pepper to taste
Preparation
    Separate leaves from stems. Wash in salt water at least 2 hours.
    Change water once or twice.
    Put in cooking pot with onion quarters.
    Let set, cold, 1 hour.
    Cook 2 1/2 to 3 hours on medium-low heat. Add bacon, cut up before cooking. Add salt, pepper and Tabasco sauce to taste.
