Company Potato Bake - cooking recipe

Ingredients
    7 Idaho potatoes (medium size)
    2 c. Cheddar cheese, grated
    1/4 c. butter or margarine
    1 1/2 c. dairy sour cream
    1/2 c. onion, chopped
    1/2 c. green pepper, diced
    1 tsp. salt
Preparation
    Boil potatoes and peel when cool.
    Coarsely grate peeled potatoes.
    In saucepan, melt cheese and butter over low heat; do not overheat.
    Remove pan from heat; stir in sour cream, onion, green pepper and salt.
    Pour sauce over potatoes in a 9 x 13-inch buttered baking dish.
    Cover and refrigerate at least 8 hours. Bake in a 350\u00b0 oven for 30 minutes.
