Chicken Ratatouille - cooking recipe

Ingredients
    4 boneless cubed chicken breasts
    1/4 c. oil
    2 small zucchini, cubed
    1 small eggplant, cubed
    1 large onion, chopped
    1 green pepper, chopped
    1/2 lb. sliced mushrooms
    1 (16 oz.) can tomatoes
    2 garlic cloves, minced
    1 Tbsp. Italian seasoning
    salt and pepper
Preparation
    In large skillet, heat oil.
    Cook chicken for 3 minutes, stirring frequently.
    Add zucchini, eggplant, onion, green pepper, mushrooms and garlic.
    Cook for an additional 2 minutes.
    Add tomatoes, stirring carefully.
    Add Italian seasoning, salt and pepper.
    Simmer, uncovered, for 10 minutes.
    This dish is done when chicken and vegetables are tender.
    Serve with white rice and salad.
