Zucchini And Chilies - cooking recipe

Ingredients
    2 lb. zucchini, diced in bite size pieces
    1 Tbsp. salad oil
    1/2 c. diced onion
    3 fresh tomatoes, chopped
    1 small can green chiles
    1/2 tsp. salt
    pepper as desired
    dash of garlic powder
    2/3 c. shredded Jack cheese
Preparation
    Cook zucchini until tender, over medium heat.
    Drain.
    In a skillet, heat oil and saute onion.
    Add tomatoes, green chiles and seasonings; blend well.
    Cook for a few minutes over reduced heat. Add cheese; mix in well.
    Cover; heat 1 to 2 minutes.
    Serve when cheese is fully melted.
    Serves 6.
