Fluffy Squash Souffle - cooking recipe

Ingredients
    2 lb. yellow squash
    1/2 tsp. salt
    1/4 c. chopped onion
    2 eggs, beaten
    1/4 lb. shredded Cheddar cheese
    2 Tbsp. sugar
    1/2 c. Ritz cracker crumbs
Preparation
    Cook squash and onion in salted water until tender. Drain and cool. Add beaten eggs and mix well. Add sugar and cheese. Place in a greased casserole dish. Sprinkle cracker crumbs on top and dot with butter. Sprinkle with black pepper and paprika. Bake at 350\u00b0 for 20 minutes.
