Company Egg Casserole - cooking recipe

Ingredients
    1/2 c. margarine
    1 lb. fresh mushrooms, diced
    1 lb. Monterey Jack cheese, shredded
    10 extra large eggs or Egg Beaters (Natural Choice in carton)
    1 pt. cottage cheese, creamed
    1/2 c. flour
    1 tsp. baking powder
    1/2 tsp. salt
Preparation
    In large frying pan, melt margarine.
    Set aside to cool. Place diced mushrooms into cooled margarine and stir until completely coated.
    In large bowl, beat eggs until blended.
    Add remaining ingredients and mushrooms.
    Pour into well-greased 9 x 13-inch dish and bake at 350\u00b0 for 45 minutes.
    Test with a knife; done when it comes out clean.
    If using Egg Beaters, increase time 15 to 20 minutes.
    Great for heart patients.
