Ten-Minute Strawberry Almond Pie - cooking recipe

2 pt. large strawberries
3/4 c. sugar
1 tsp. lemon juice
2 to 3 drops red food coloring
3 Tbsp. cornstarch
1 c. water
1/2 c. sliced almonds (optional)
2 c. whipping cream (optional)
9-inch pastry pie crust or graham Ready-Crust
Preparation

Bake pastry crust.
Combine 1 cup diced strawberries with cornstarch, sugar, water, lemon juice and food coloring.
Cook over medium heat until thickened (about 5 minutes).
Remove caps from remaining strawberries.
Place berries in pie crust, tips up. Chill.
Pour thickened mixture over berries. Top with whipped cream and almonds (if desired) just before serving. Serves 8.
