Cajun Fried Rice(Handed Down From Generation To Generation) - cooking recipe

Ingredients
    1/2 lb. sausage or bacon
    4 or 5 c. cold cooked rice
    1/2 c. oil or bacon grease
    1 medium onion, chopped
    salt and pepper to taste
    2 large eggs
    3/4 c. chopped green onions
    bell pepper (optional)
    celery, garlic and parsley (optional)
Preparation
    Fry sausage in oil until lightly brown.
    Add chopped onion; saute.
    Add rice and other ingredients except eggs and fry until crisp.
    Stir constantly.
    Add eggs and stir until eggs are cooked. Serve as main dish.
    Nothing else is needed to go with this except children like catsup on it.
