Uniquely Yours "Chicken" Casserole - cooking recipe
Ingredients

4 vegetarian chickens, cooked and cut into bite size (frozen chix is better than canned)
1 pkg. Uncle Ben's white and wild rice pilaf, cooked to directions
2 ribs celery, chopped
1/2 onion, chopped
1/2 lb. mushrooms, sliced
2 Tbsp. butter or margarine
1 1/2 c. sharp Cheddar cheese, grated
3/4 c. soft bread crumbs (may substitute 1 c. Pepperidge Farm stuffing)
2 cans mushroom soup
1 c. mayonnaise
1/4 c. milk
1 Tbsp. lemon juice
Preparation

Saute celery, onion and mushrooms in butter.
Cook rice according to directions on package.
Mix together celery, onions, mushrooms and rice.
Mix together soup, mayonnaise, milk and lemon juice.
Layer in 9 x 13-inch pan:
rice, chicken, sauce, cheese and breadcrumbs or sliced almonds.
