Salsa Suave - cooking recipe
Ingredients

4 lb. ripe tomatoes, peeled, seeded and chopped
4 cloves garlic, minced
2 medium onions, chopped
8 jalapeno chiles, sliced, using some seeds (for milder taste, 5 chiles)
2/3 c. cider vinegar
3 to 4 tsp. oregano
pinch of cayenne pepper
2 Tbsp. tomato paste
Preparation

Combine ingredients, except chiles and simmer 10 minutes to reduce some of the excess liquid.
Add chiles and simmer 10 to 15 minutes more.
(Use a 5-quart open saute pan as it allows the liquid to reduce quickly without overcooking the ingredients.)
Makes one quart.
