Glazed Pork Loin With Garlic Potatoes - cooking recipe

1 center cut boneless pork loin (4 to 5 lbs)-rolled and tied
Salt and pepper to taste
2 lb red-skinned potatoes, cut in 2 inch cubes
3 Tbsp chopped fresh rosemary or 3/4 tsp dried
3 Tbsp red currant jelly
3/4 c dry white wine
1 Tbsp Dijon mustard
1 to 2 tsp minced garlic
Preparation

Preheat oven to 325 degrees. Season pork loin with salt and pepper and place on a rack in a shallow roasting pan.
Roast in center of oven for 2 to 2 1/2 hours (about 25 to 30 minutes per pound), or until meat thermometer inserted in center of loin registers 165 degrees.
