Lemon Cream Pie - cooking recipe
Ingredients

2 c. sugar
8 Tbsp. cornstarch
dash of salt
6 eggs
1/2 stick oleo
4 c. milk
10 Tbsp. lemon juice
2 tsp. grated lemon rind
Preparation

Mix sugar, cornstarch and salt until blended.
Melt butter in the milk and heat until lukewarm.
Slowly add enough lukewarm milk to the sugar mixture to make a thin, smooth paste.
Pour the paste back into the milk.
Cook over moderate heat, stirring constantly, until mixture thickens and coats spoon.
Slowly pour some of the hot mixture into 6 slightly beaten egg yolks.
Beat into the hot mixture.
Boil for 2 minutes, stirring constantly.
Remove from heat; continue to stir while adding the lemon rind and juice.
