Tomato Soup - cooking recipe

Ingredients
    2 Tbsp. olive oil
    3 large onions
    1/2 c. chopped celery
    2 to 3 garlic cloves
    1 large can (46 oz.) low sodium light 'n tangy V-8 juice
    1 (28 or 29 oz.) can peeled whole tomatoes
    3 Tbsp. fresh basil or 1 Tbsp. dried basil
Preparation
    Saute onions in olive oil, add celery and saute until tender. Then add minced garlic and fresh basil, saute for about 2 minutes. Add V-8 juice, tomatoes and basil.
    Simmer soup for at least 1/2 hour before serving.
