White Bean And Tomato Salad - cooking recipe

Ingredients
    4 c. cooked cannellini beans
    2 cloves garlic, minced
    1/2 red onion, minced (about 1/4 c.)
    6 pale-center celery stalks with leaves, thinly sliced crosswise
    juice of 1 lemon
    2 Tbsp. extra-virgin olive oil
    1 Tbsp. chopped fresh mint or basil (1 tsp. dried)
    4 to 5 tomatoes, cut into 1/2-inch cubes
    salt and freshly ground pepper to taste
Preparation
    Drain beans.
    Combine garlic, onion, celery, lemon juice, olive oil, mint or basil, tomatoes and salt and pepper in a plastic bowl with airtight top.
    Add beans and carefully stir with a wooden spoon so beans won't break apart.
    Serves four.
