Risi Bisi Or Rice Valencienne - cooking recipe

Ingredients
    3 oz. salad oil
    1 oz. garlic, minced
    3 oz. cooked ham, diced fine
    1 qt. chicken stock
    1 tsp. white pepper
    1/4 c. pimentos, diced
    1 oz. onion, chopped
    1 lb. rice
    1 bay leaf
    1 tsp. salt
    1/2 c. green peas, cooked
    1/2 c. mushrooms, cooked and diced
Preparation
    Saute onion and garlic in oil until lightly browned.
    Stir in rice, ham and bay leaf.
    Saute about 5 minutes, stirring often. Combine rice mixture with stock, salt and pepper; stir well. Bring to a boil.
    Cover tightly.
    Bake at 350\u00b0 for 20 to 25 minutes, or until rice is done.
    Remove bay leaf.
    Heat peas, pimentos and mushrooms.
    Add to rice; toss lightly with fork to combine.
    Cover and heat for 3 to 4 minutes longer.
