Georgia Squash Casserole - cooking recipe

Ingredients
    2 lb. yellow squash, sliced (6 c.)
    1/4 c. chopped onion
    1 can cream of chicken soup or cream of mushroom soup, undiluted
    1 c. sour cream
    1 c. shredded carrot
    1 pkg. (8 oz.) herb seasoned stuffing mix
    1/2 c. margarine, melted
Preparation
    Cook squash and onion in boiling salted water, 5 minutes. Drain well.
    Combine soup, sour cream and carrots and fold into squash-onion mix.
    Combine stuffing mix and margarine.
    Spread half of stuffing mix in bottom of 12 x 7 x 2-inch casserole.
    Spoon vegetable mix over and top with remaining stuffing mix.
    Bake at 350\u00b0 for 30 minutes.
