Steamed Chicken And Gravy - cooking recipe

Ingredients
    2 (1 1/3 to 2 lb.) split broilers or fryers
    1 tsp. salt
    1 tsp. pepper
    vegetable oil
    1 c. butter or margarine
    2 Tbsp. all-purpose flour
    1/4 c. water
Preparation
    Sprinkle chicken with salt and pepper and cook in 1/4-inch of hot oil until lightly brown.
    Place chicken in a large Dutch oven. Add water and butter.
    Cook, covered, over medium heat for 40 minutes or until tender.
    Remove chicken to serving platter. Reserve pan drippings.
    Combine flour and 1/4 cup water until smooth.
    Pour flour mixture into pan drippings.
    Cook, stirring constantly, until thick.
    Serve gravy with chicken.
    Makes 6 to 8 servings.
