Gingered Shrimp - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    1 Tbsp. grated fresh ginger
    1 lb. medium shrimp, peeled
    1 (20 oz.) can pineapple chunks, drained (save juice)
    4 oz. fresh or 1 (6 oz.) pkg. frozen snow peas
    1 sweet red or green pepper, sliced
    1 Tbsp. cornstarch
    1/2 tsp. rice wine or cider vinegar
    1/4 tsp. sugar
    salt to taste
Preparation
    In wok over medium-high heat, heat oil 1 minute.
    Add ginger; cook 1 minute.
    Add shrimp and cook 4 minutes.
    With slotted spoon, remove shrimp; set aside.
    Add pineapple, snow peas and pepper to wok.
    Cook 1 minute; in measuring cup, stir pineapple juice, cornstarch, vinegar, sugar and salt until smooth.
    Add to wok.
    Bring to a boil.
    Add shrimp.
    Cook 3 minutes until sauce thickens.
