Apricot Chicken Delight - cooking recipe

Ingredients
    8 canned apricot halves
    4 Tbsp. apricot juice
    4 Tbsp. cider vinegar
    4 tsp. sugar
    3 tsp. cornstarch
    2 tsp. catsup
    1/4 tsp. ginger
    dash of salt
    8 oz. cooked, diced chicken
    1 c. diced green pepper
    1 tomato
    1 c. brown rice, cooked
Preparation
    Set aside apricots.
    Combine juice and next 6 ingredients. Cook over medium heat 5 minutes.
    Add green pepper and chicken, cooking briefly until done.
    Don't overcook the green peppers, then add the apricots at the last and tomato chunks for color. Serve over cooked brown rice.
    Serves 2.
