Relyenong Ta Long(Eggplant Omelette, Filipino Style) - cooking recipe

Ingredients
    1/2 lb. ground pork
    2 large eggplant
    2 eggs (fresh), scrambled
    1 small onion
    2 pieces garlic, minced
    1 Tbsp. cooking oil
    dash of soy sauce and pepper
Preparation
    Broil eggplant, skin it and put aside.
    Heat pan with cooking oil with slow heat; brown garlic.
    Stir onion until translucent and mix meat until brown.
    Season with soy sauce and dash of pepper. Cover and simmer about 5 minutes.
    Take eggplant and part in the middle; stuff with the cooked ingredients and pour with the scrambled eggplant.
    Fry in a large pan.
