Cucumber Relish - cooking recipe
Ingredients

6 cucumbers, peeled and diced
1 medium onion, chopped
1 green pepper, chopped
1 Tbsp. salt, sprinkled over
1 c. white vinegar
1 tsp. celery salt or seed
1 1/2 c. sugar
Preparation

Sprinkle salt over cucumbers, onion and green pepper.
Cover and set in refrigerator 1 hour; drain.
Mix vinegar, celery salt or seed and sugar.
Pour over cucumber mixture.
Mix well.
Place in covered jars and refrigerate.
Can be kept 2 weeks.
Makes 2 full mayonnaise jars.
