Carrot Oat Muffins - cooking recipe
Ingredients

3/4 c. quick cooking oats
1 c. low-fat buttermilk
1 1/4 c. unbleached flour
3 tsp. baking powder
1/2 tsp. salt
1 egg
3 Tbsp. honey
1/2 c. carrots, shredded
1 tsp. orange rind, grated
Preparation

Combine oats and buttermilk in a mixing bowl and let stand 15 minutes.
Beat egg with honey.
Meanwhile, combine flour, baking powder and salt.
Stir with egg into the oat mixture.
Fold in carrots and orange rind, stirring only enough to moisten all ingredients.
Spoon into muffin cups sprayed with low-fat cooking spray.
Bake at 400\u00b0 for 20 to 25 minutes.
Serves 12.
