Zucchini Pickles - cooking recipe

Ingredients
    2 lb. small zucchini
    2 small onions, peeled and sliced
    1/4 c. salt
    water
    3 c. white vinegar
    3 tsp. pickling spices
    1 tsp. turmeric powder
    2 c. sugar
Preparation
    Slice zucchini and onions; cover with water and add salt.
    Let stand 3 hours.
    Combine remaining ingredients; bring to a boil. Pour over slices and let stand 2 hours, then bring syrup and zucchini slices to a boil for 3 minutes.
    Process 5 minutes in hot water bath.
    Makes 3 pints; double recipe makes 3 quarts.
