Vegetable Bundles - cooking recipe

Ingredients
    vegetable cooking spray
    2 medium size yellow squash, sliced
    1 large onion, cut into 4 slices
    1 large tomato, cut into 4 slices
    2 Tbsp. white wine vinegar
    1 Tbsp. Dijon mustard
    1/4 tsp. salt
    1/4 tsp. pepper
    2 tsp. grated Parmesan cheese
Preparation
    Cut 4 (18 x 12-inch) pieces of heavy-duty aluminum foil; coat with cooking spray.
    Place squash evenly in center of each; top with onion and tomato slices.
    Combine vinegar and next 3 ingredients; drizzle evenly over vegetable bundles.
    Sprinkle evenly with cheese and seal securely.
    Bake on a baking sheet at 400\u00b0 for 20 minutes or until vegetables are tender.
    Yield:
    4 servings (50 calories, 18% from fat, per serving).
