Ingredients

1 c. Miracle Whip salad dressing
1 (8 oz.) can pineapple chunks, drained
1/2 c chopped maraschino cherries
2 Tbsp. confectioners sugar
2 c. miniature marshmallows
1 (8 oz.) pkg. cream cheese
1 (8 3/4 oz.) can apricot halves, drained and chopped
few drops red food coloring
1 c. heavy cream, whipped
Preparation

Add salad dressing to softened cream cheese, mixing until well blended.
Stir in fruit, sugar and food coloring.
Fold in marshmallows, then whipped cream.
Pour into 9 x 5-inch loaf pan and freeze.
Unmold and surround with lettuce.
Makes 10 to 12 servings.
