Zucchini Bread - cooking recipe

Ingredients
    3 eggs, well beaten
    3 c. grated zucchini
    2 tsp. vanilla
    1 tsp. salt
    1 tsp. baking powder
    1 1/2 c. chopped nuts
    1/4 c. raisins (optional)
    2 c. sugar
    1 c. vegetable oil
    3 c. all-purpose flour
    1 tsp. baking soda
    1 tsp. cinnamon
    1 1/2 c. coconut
Preparation
    Combine eggs, sugar, zucchini and oil.
    Mix well.
    Add vanilla, flour, salt, soda, baking powder and cinnamon; stir until well blended.
    Stir in nuts, coconut and raisins.
    Pour into 2 lightly greased and floured 5 x 9-inch loaf pans.
    Bake at 325\u00b0 to 350\u00b0 for 1 hour.
