Ingredients

2 c. sifted all-purpose flour
1 tsp. soda
1 tsp. salt
2 Tbsp. sugar
2 eggs, beaten
2 c. buttermilk
2 Tbsp. melted shortening
Preparation

Sift dry ingredients together into bowl.
Combine well beaten eggs, buttermilk and melted shortening.
Add to dry ingredients, stirring until flour is barely moistened (disregard lumps in batter; overstirring makes less tender pancakes).
Drop batter on hot, lightly greased griddle or frying pan; turn cakes when they are golden brown and bubbles on surface break.
Makes about 18 pancakes.
