Blueberry Muffins - cooking recipe
Ingredients

1 3/4 c. sifted plain flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
3/4 c. milk
1 egg, well beaten
1/3 c. oil
1 c. fresh blueberries
2 Tbsp. sugar
1 tsp. grated lemon rind
Preparation

Sift together dry ingredients in mixing bowl.
Combine milk, egg and oil and add to dry ingredients all at once.
Stir until dry ingredients are moistened.
Toss together blueberries and 2 tablespoons sugar; fold into batter along with lemon rind.
Bake in greased muffin pan about 25 minutes at 400\u00b0.
While still warm, dip in melted oleo and sprinkle with sugar.
