Pigs In Potatoes - cooking recipe

Ingredients
    1 tsp. minced onion
    1 tsp. minced parsley
    2 c. mashed potatoes
    1 egg yolk
    6 Vienna sausage
    1 egg, diluted with 1 Tbsp. water
Preparation
    Mix the first 4 ingredients.
    Saute sausage.
    Coat with potato mixture.
    Roll in bread crumbs.
    Dip in egg and water mixture; roll in crumbs again.
    Fry in deep fat at 375\u00b0 until golden brown.
