1 c. all-purpose flour
3/4 c. whole wheat pastry flour
3/4 c. packed brown sugar
1 Tbsp. baking powder
1/2 to 1 tsp. ground cinnamon
2 egg whites
2/3 c. buttermilk
1/3 c. unsweetened applesauce
2/3 c. chopped dates
2/3 c. chopped nuts (pecans or walnuts)
Preparation

Preheat oven to 400\u00b0.
Spray muffin cups with no-stick spray. Combine in large bowl the all-purpose flour, whole wheat flour, brown sugar, baking powder and cinnamon.
