Warm Lemon Chicken Salad - cooking recipe

Ingredients
    1/4 c. shredded carrot
    1 can Hormel chunk breast of chicken, drained
    2 c. thinly sliced bok choy, nappa or spinach
    1/3 c. lemon juice
    1/4 c. firmly packed brown sugar
    2 Tbsp. water
    1 tsp. each cornstarch and soy sauce
Preparation
    Arrange carrot and chicken on greens.
    In saucepan, combine remaining ingredients. Cook and stir until slightly thickened. Spoon warm dressing over chicken. Garnish as desired.
    Makes 2 servings.
