Apple Pie Filling - cooking recipe

Ingredients
    4 1/2 c. sugar
    1 c. cornstarch
    1 Tbsp. salt
    2 Tbsp. cinnamon
    1/2 tsp. nutmeg
    10 c. water
    3 Tbsp. lemon juice
Preparation
    Pare, slice and pack apples in quart jars.
    Cook until bubbly the following ingredients:
    sugar, cornstarch, salt, cinnamon, nutmeg and water.
    Remove the resulting syrup from the heat and add 3 tablespoons lemon juice.
    Pour the hot mixture over the apples, working down with dull knife to remove the air bubbles.
    Seal, cook in a cold water packer for 20 minutes. 1 quart of filling makes1 (9-inch) pie or 1 (8 x 8) apple crisp.
