P.J. Johnston'S Spinach Stuffed Onion Rings - cooking recipe

Ingredients
    12 oz. beer, room temperature
    1 1/2 c. flour
    1/2 tsp. salt
    4 large white onions
    oil (vegetable)
    2 (10 oz.) pkg. frozen creamed spinach, cooked
Preparation
    Mix beer, flour
    and
    salt.
    Let sit for 1 hour.
    Slice onions 1-inch thick.
    Separate
    into rings (6 to 8 outer rings to an onion;
    discard centers).
    Heat oil in deep-fat fryer to 375\u00b0. Dip rings
    in
    batter.
    Fry until golden brown, about 2 to\t3 minutes.
    Drain
    on
    paper
    towels
    (store
    at
    room temperature, covered, until
    final baking).
    Place rings on an oiled baking sheet and fill with spinach.
    Bake at 350\u00b0 for 15 to 20 minutes or until spinach bubbles.
    Serves 12.
