Florentine Quiche - cooking recipe

Ingredients
    5 eggs
    1/4 c. milk (half and half)
    6 oz. mixed shredded Colby and Monterey Jack cheese
    1/2 c. well drained (1/2) frozen spinach
    1 c. chopped onion
    salt and pepper to taste
    9-inch deep dish pie shell
Preparation
    Saute onion until soft in 1/2 stick butter or oleo.
    Beat eggs with salt and pepper.
    Add milk, shredded cheese, spinach and cooled sauteed onion.
    Mix well and pour into unbaked pie shell. Bake at 375\u00b0 until crust is brown and quiche is set well in the center.
    Let stand at least 10 minutes before serving.
    Good with picante.
