Pot Roast(Lo-Fat) - cooking recipe

Ingredients
    1 boneless lean beef roast (at least 1 1/2 lb.)
    1 (14 1/2 oz.) can stewed tomatoes, chopped
    1/2 c. onion, chopped (1 medium)
    1/2 to 1 c. tomato juice
    1 clove garlic, minced (can use more)
    2 bay leaves
    2 to 3 beef bouillon cubes
    1 tsp. dry basil
    1/8 tsp. pepper
    3 medium potatoes, peeled and quartered
    3 carrots, cut
    1 large onion, sliced in 1-inch lengths
    2 Tbsp. water
    4 tsp. cornstarch
Preparation
    Spray cold Dutch oven.
    Preheat over medium-high heat and then brown the meat on all sides.
    Add tomatoes, chopped onion, tomato juice, bay leaves, garlic, bouillon cubes, basil and pepper. Reduce heat and simmer 1 hour, covered.
