Mock Apple Pie - cooking recipe

Ingredients
    36 Ritz crackers
    2 c. water
    2 c. sugar
    2 tsp. cream of tartar
    2 Tbsp. lemon juice
    1 stick butter or margarine
    2 (9-inch) ready-made pie crust shells
    sprinkle of cinnamon
Preparation
    Roll out one pie crust shell.
    Break Ritz crackers coarsely into pastry lined plate.
    Combine water, sugar and cream of tartar in saucepan.
    Boil gently for 15 minutes (low heat).
    Add lemon juice and let cool.
    (Mixture turns into syrup.)
    Pour syrup over crackers; dot generously with butter or margarine, then sprinkle with cinnamon.
    Cover with top crust.
    Trim and flute edges together.
    Cut slits into top crust to let steam escape.
    Bake in preheated oven at 425\u00b0 for 30 to 35 minutes or until crust is golden brown.
    Serve warm.
