Zucchini Relish - cooking recipe
Ingredients

12 c. ground zucchini
4 c. onions, chopped
1 red pepper, chopped (optional)
1 green pepper, chopped (optional)
5 Tbsp. salt
2 1/2 c. vinegar
6 c. sugar
3 Tbsp. cornstarch
1 Tbsp. dry mustard
3/4 tsp. nutmeg
3/4 tsp. turmeric
1 1/2 tsp. celery seed
1/2 tsp. pepper
Preparation

Mix zucchini, onions, red and green peppers with salt.
Let sit while mixing remaining ingredients in large kettle.
Cook spices until starts to thicken.
Add zucchini mixture and mix well.
Cook for 20 to 30 minutes stirring often.
Makes 8 pints.
