Stuffed Peppers Lorena - cooking recipe
Ingredients

6 medium bell peppers
1 1/2 lb. ground beef
1/2 c. chopped onion
1 1/2 c. cooked rice
1/4 c. diced bell pepper
1/4 c. seasoned bread crumbs
1 Tbsp. cajun seasoning
1/4 lb. butter or margarine
1/3 c. water
1 1/2 slices cheese
Preparation

Cut tops off peppers and save; remove seeds.
Rinse and drain. In a 10-inch skillet, brown ground beef; drain.
Use tops of peppers to dice.
Add onion, rice, diced pepper, bread crumbs, seasoning and butter or margarine.
Cook on low heat for 10 minutes.
Fill peppers with mixture.
Place peppers in a glass baking dish.
Pour water in bottom of dish.
Cover with plastic wrap.
Microwave on Roast setting for 12 to 15 minutes.
Remove from microwave, removing plastic wrap.
Cover each pepper with 1/4 slice cheese.
Let stand 5 minutes before serving.
Serves 6.
