Spinach Salad - cooking recipe

Ingredients
    2 bags spinach
    3 hard-boiled eggs, chopped
    shredded carrots
    1 c. minced red onion
    bacon bits (optional)
    1 tsp. salt
    1 c. oil
    1/3 c. cider vinegar
    1/2 c. sugar
    1 Tbsp. dry mustard
Preparation
    In blender, mix sugar, cider vinegar, dry mustard and salt. Once blended, add 1/2 cup minced red onion and oil.
    Blend well. Let stand 2 hours.
    To serve, toss spinach, remaining red onion, bacon bits, egg and shredded carrots with dressing on top.
