Lentil Soup - cooking recipe
Ingredients

5 c. chicken broth (canned)
3 c. water
1 1/2 c. lentils
2 lb. can crushed tomatoes
3 carrots, cut up
1 onion, chopped
1 stalk celery, chopped
2 garlic cloves, minced
1/2 tsp. basil
1/2 tsp. oregano
1/4 tsp. thyme
1 bay leaf
1/2 c. minced parsley
2 Tbsp. vinegar
salt and pepper
Preparation

In a heavy pot combine broth, water, lentils, tomatoes, carrots, onion, celery, garlic, basil, oregano, thyme and bay leaf.
Bring to boil and simmer covered for two hours.
Stir in parsley, vinegar and salt and pepper to taste.
Discard bay leaf. Thin soup, if desired, with water or chicken broth.
