Chicken Soup - cooking recipe

Ingredients
    2 1/2 lb. chicken pieces (skin removed)
    1 onion, chopped
    4 carrots, sliced
    3 Tbsp. soy sauce
    1 tsp. salt
    water (to cover, about 3 1/2 c.)
    3 potatoes, peeled and diced
    2 stalks celery, sliced
    1 tsp. Tabasco
Preparation
    Combine all ingredients in large kettle.
    Bring to boil. Cover and simmer over low heat for 2 to 3 hours.
    Stir occasionally.
    Add water, if needed.
    Cool.
    Remove bones.
    Chill, then discard fat.
    Reheat and serve.
    Serves 6 to 8.
