2 medium potatoes, peeled and diced
1/4 c. diced onion
1/2 c. sliced celery
1/2 c. shredded carrot
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. water
1/4 c. butter
1/4 c. flour
2 c. milk
2 c. shredded Cheddar cheese (1/2 lb.)
1 c. diced ham
Preparation

Combine the vegetables and seasonings in a large saucepan; heat to a boil.
Reduce heat, cover and simmer until the vegetables are tender, about 10 minutes.
