Iowa Corn Relish - cooking recipe

Ingredients
    20 ears sweet corn (2 1/2 qt. kernels)
    1 c. chopped green pepper
    1 c. chopped sweet red pepper
    1 1/2 c. chopped onion (4 medium)
    1 c. chopped celery
    1 1/2 c. sugar
    1 1/2 Tbsp. mustard seed
    1 Tbsp. salt
    1 tsp. celery seed
    1/2 tsp. turmeric
    2 2/3 c. vinegar
    2 c. water
Preparation
    Combine all ingredients; simmer for 20 minutes.
    Pack in clean, hot jars; leave 1 inch headspace.
    Make certain vinegar covers veggies.
    Process 15 minutes.
    Makes 6 to 7 pints.
