Country Garden Potatoes - cooking recipe

Ingredients
    12 med. red potatoes
    1/3 c. milk
    1 red or green bell pepper, or a combination of both for color, diced
    1 Tbsp. minced fresh parsley
    1/2 c. grated sharp Cheddar cheese
    1/4 c. butter, melted
    salt and pepper to taste
Preparation
    Boil potatoes in jackets until just tender, about 25 minutes. Leaving skins on, dice potatoes into bite sized chunks and place in shallow casserole.
    Moisten with milk.
