Shrimp Salad(Serves 4) - cooking recipe

Ingredients
    1 lb. large shrimp, peeled and deveined
    1 lemon, sliced
    1/2 lb. mushrooms
    1/4 c. olive oil
    1/4 c. lemon juice
    1/4 c. dry white wine
    3 Tbsp. Dijon mustard
    1 large orange, peeled and sliced
    1 jar marinated artichoke hearts, drained and halved
Preparation
    Place shrimp and lemon slices in saucepan.
    Cover with water and bring to boil.
    Boil 1 minute.
    Drain and cool.
    Whisk together next 4 ingredients.
    Place shrimp and mushrooms in a shallow glass dish and marinate in oil mixture for several hours.
    To serve arrange lettuce leaves on individual plates with an orange slice in center.
    Arrange shrimp, mushrooms and artichoke hearts on top of orange slices.
